Queijo Bica Metal Plate

Queijo Bica is a raw three milk (cow, goat, sheep) cheese from Portugal. Bica is made by putting fresh curd from the 3 milks into a bag that is then drained, smeared with paprika and wine and allowed to age. Milks used to make this cheese have a saltiness due to the animals grazing on grass by the sea. The cheese is chewy and smooth with rich, buttery, salty flavors.
